Gourmet Burger with Dulse Seaweed

Makes: 6 portions
Nutrition (per burger, without extras and bun): 250 Kcal; Fat: 8,9 gr; saturated fat: 1,94 gr; carbs: 24,6 gr; sugars: 2,8 gr; fiber: 8,6 gr; protein: 14,5 gr; salt: 1,1 gr

INGREDIENTS |

● 3 raw beetroots, grated (medium sized)
● 1 small onion, peeled and finely chopped
● 2 garlic cloves, peeled and finely chopped
● 200 gr of mushroom buttons (white), hand cleaned and finely chopped (you may use other type of mushrooms at hand)
● 100 gr of fresh dulse seaweed (need to cut into small pieces) or 20 gr of flaked dulse (no need to soak) or 20 gr of dried dulse seaweed (you must soak and cut into small pieces) – i have used AlgaPlus seaweed – see tips
● 125 gr of rolled oats
● 50 gr of spelt flour
● 1 tbsp olive oil
● 4 eggs (or 4 tbsp of chia seeds soaked for 15 minutes in 150 ml of water – vegan option)

● Pinch of sea salt and red pepper flakes
● 1 tsp of dried rosemary
● Coconut oil for frying

6 burger bus (wholegrain preferably)

Toppings

● Smashed Avocado
● Lambs Lettuce
● 1 tsp of Dijon mustard (Dijon is quite strong, so caution is required)

PREPARATION |

1 Place the beetroot, onion, garlic and mushroom in a large bowl; then add the seaweed, oats, eggs or chia, rosemary, salt, pepper and flour.

2 Mix together well and leave to sit for at least 30 minutes so the oats can soften and soak up the flavours. Once 30 minutes are up, try forming a burger with your hands (you may get more burgers, it depends on the size you are aiming for).

3 Heat the coconut oil in a frying pan and place the burger once hot; turned them over a few times until you see a golden/yellowish colour coming up.

4 Cut the buns in halves, ad a few lambs lettuce leaves, serve the burger on top of that, avocado mash on top and mustard before closing with top bun slice. Or not! If you prefer not to eat with the bun, just add all the ingredients into a plate, decorate at your own taste and enjoy.

TIP | You can freeze the burger mixture; you may need to add more flour once you defrost it.
