Preparation and Baking time: 35 a 40 mins
- 250 gr organic rolled oats (you can use any gluten-free option or any other cereal/grain)
- 100 gr of organic pumpkin seeds (or any other mix of nuts and seeds)
- 50 ml date syrup or 50 ml honey (alternatively, you can use 120 gr of dates but these have to pressed to a pureé, you may have to add to the melted coconut oil in a food processor)
- 2 tsp of coconut oil
- Pinch of Himalayan salt
Pre-heat the oven at 160ºC.
Blend the ingredient together, either using food processor or with your hands or utensils.
Place a baking sheet in a oven tray and pour to mix onto it. Oven for 30 minutes or more (depending on the oven) but I would advise to keep an eye on it and stir it every now and then. You want a caramel colour, not a dark brown in the oats (some areas make look darker because of the date syrup/honey and cinnamon combo).
It can be served with natural yogurt, you can add to the milk or vegetable drink for breakfast, so many other options!
Store in a air-tight cointainer for up to 2 weeks.
